Chifa is a culinary term for Peruvian-Chinese food. A tradition that originates itself from Puru when the wave of Chinese immigrants came to Puru in the late 1800s.The Chinese Cantonese elements fused ingredients with traditional Creole Limean food and thus created dishes such as the Lomo Saltado. The tenderloin beef does not need to be marinated so this delightful dish is cooked up in no time and it has the best tastes ever as the two traditions combine cooking styles and flavors.

Ingredients:
  • 2 cup White rice - cooked
  • Fro the Fries
  • 3 large Potatoes
  • Fro the Beef
  • 1/4 cup Vegetable oil
  • 1 lb. Tender beef, cut into strips.
  • 1 tbsp. Garlic, minced
  • 2 ea. Red onions
  • 2 ea. Roma tomatoes
  • 1/4 tsp. Paprika
  • 1/8 tsp. Cumin
  • 1 bu. Cilantro
  • 1/4 cup Red wine vinegar
  • 1/2 cup Soy sauce
  • Salt, to taste
  • Pepper, to taste

Preheat the oil for deep frying approx. 400°F/200°C. Then, blanch the chunky fries until tender. Allow them to sit in the drainer to refry to a crisp later.

In a hot pan, sear the beef strips until caramelized all over. Add the sliced onions and tomatoes to the pan. Season with salt, pepper, paprika, and cumin and saute together for 2 to 5 minutes.

Add the fresh cilantro, red wine vinegar and soy sauce simmer for a further minute.

Return the fries to the hot oil and fry until golden crisp. Serve the sauteed beef on top garnish with fresh cilantro. Traditionally white rice is also served if you like.
