Do you like poppy seed strudel? We love them, and we perfected our recipe. This recipe for preparing poppy seed strudel is perfect as you don’t have to wait for the dough to rise, just a little time until the filling cools down. Soft and delicious.

Ingredients:
  • Filling:
  • 14.1 oz. Ground poppy seeds
  • 5.2 oz. Sugar
  • 1.7 oz. Semolina
  • 1 cup Milk
  • Dough:
  • 0.7 cup Milk
  • 1 tbsp. Sugar
  • 0.2 oz. Yeast
  • 1 Large Egg
  • 1 Large Egg white
  • 4.4 oz. Butter
  • 2 tbsp. Sugar
  • 17.6 oz. Soft flour
  • For coating:
  • Egg yolks
  • 1 tsp. Milk
Directions:

Heat the milk for the yeast. Also, heat the milk for the filling. Put sugar and yeast in warm milk and let it work.

Mix poppy seeds, sugar, and semolina, then pour boiling milk, mix and leave to cool. Stir occasionally to cool faster.

Put flour in a bowl, add butter and egg and egg whites, then pour in the yeast.

First, mix with a food processor and then knead by hand. Squeeze the dough well so that the butter is nicely incorporated. Finally, add a little flour, as much as it fits in your fingers, and mix the dough.

Sprinkle a little flour on the table and mix again. If it is still hot, cover the dough with a bag and wait.

Divide the dough into two parts. Put baking paper in the baking tray with a partition made between the two strudels, so that they do not stick.

Roll out the dough to the width of the baking tray, and only then to the length. Length is greater than width.

Apply half a measure of poppy seeds and transfer the lower side first, then the left side, and then the right side, 1-2 cm on each side.

Continue twisting in the usual way.

Put both hands under the strudel and transfer it to the baking tray. Repeat with the second dough.

Whisk the egg yolks with the milk and coat the strudels. Drill them a little with a fork.

Preheat the oven to 356 °F/180 °C and bake. Bake for 40 minutes, after 20 put on baking paper.

Leave the baked strudels to cool. Enjoy!
