Fantastically soft rolls, which stay fresh for the third day. They are also softer than cotton rolls, airy as foam. You have to try.

Ingredients:
  • 1.75 cup Milk
  • 2 tbsp. Sugar
  • 0.35 oz. Instant yeast
  • 2 Large Eggs
  • 3.5 oz. Margarine or butter
  • 1 tbsp. Salt
  • 1 tbsp. Vinegar
  • 1 tsp. Baking powder
  • 31.7 oz. Soft flour
  • 1 tbsp. Milk
Directions:

In a medium bowl, add sugar and yeast in warm milk, and stir to mix well. Then add a little flour, egg yolks and egg whites, melted butter (leave one tablespoon), baking powder, and vinegar and mix well again.

Add a little more flour and mix.

When we have mixed everything well, add the rest of the flour and knead the dough. The dough is soft and sticky and should knead a lot. About 10 minutes.

As you knead the dough it will set.Halfway through the mixing, take a break to rest your hands. Wash your hands and you can lightly oil them.

Knead the dough again. Applying oil will not stick to your hands so much, and it should be sticky.

Raise the dough, shake out the separated butter in a bowl and lower the dough. Stir it a little, bending the ends of the dough inwards.

Round off and cover with a cloth or foil and leave in a warm place for an hour, or longer.

Take the dough out of the bowl with folded hands. Pour a little, then mix the dough just a little. Divide it into 16 approximately equal parts.

Shape each piece (see video) into a ball by bending the ends outwards and twisting them slightly on the table. Place the baking paper on a large baking sheet.

Lightly grease the rolling pin with oil. Take one ball, then use your fingertips to thin it a little by going up and down it.

Turn around and do the same. Use the rolling pin to go from the middle upwards, downwards, to get an elliptical shape.

Bend the lower part 1 cm and tap it with your fingers, then roll up the whole bun. Finally, stretch the upper part to be square and finish rolling. It's simple and it's best to see in the video how they roll.

Arrange them on a baking sheet and cover them with foil, then leave them to stand for about 40 minutes, after that time turns on the oven at 390 °F/200 °C to warm up and leave the rolls to stand for as long as possible.

Egg wash and sprinkle them with sesame and flex seeds.

Put the muffins to bake for 20 minutes, or depending on the oven, until they turn nicely as in the photos.
