One Pot Pasta-Shrimp Gnocchi

In only 30 minutes, a fantastic shrimp and potato dumpling meal can be on the table. Serve with a white wine such as a Soave, Valpolicella, or a Ripasso (for a hint of sweetness), in accordance with the cream sauce.

Ingredients:
  • 1 medium Yellow Onion
  • 3 cloves Garlic
  • 1 tbsp. Olive Oil
  • 7 medium Shrimp
  • 2 tbsp. Butter (divided)
  • 16 oz. Gnocchi
  • 1/2 cup White Wine
  • 7 oz. Cream Cheese
  • 1/2 cup Fresh Dill
  • 1 cup Chicken Broth
  • 1/8 tsp. Salt
  • 1/8 tsp. Ground Black Pepper

Dice and place in separate bowls, onions, garlic and dill.

Preheat a large frying pan with olive oil on medium to high heat.

Add shrimp and fry for 4 to 5 minutes on each side, until the outside is pink, tails are red and the flesh is slightly opaque and white in color. Remove from the pan, set aside.

In the same pan, add 1 tbsp of butter and gnocchi.

Continue stirring and cook until gnocchi are golden brown, 6 to 10 minutes.

Add 1 tbsp butter, onion and garlic to the pan. Sauté’ until onions are translucent.

Add wine, lower heat and cook until wine almost evaporates. Then add cream cheese, dill, chicken broth, salt and pepper, mix well and allow to cook for a few minutes.

Add shrimp and continue cooking until sauce is slightly thickened.
