  • lb. Salmon
  • 2 cup Potato
  • 1 cup Cherry Tomato
  • 1/2 cup Milk
  • 1 tbsp. Olive Oil
  • 1 tbsp. Parsley [For Garnish]
  • 1 pinch Salt
  • 1 pinch Black Pepper

Put the potatoes in a large pot with boiling water, sprinkle some salt. Cook for 15 minutes.

Meanwhile, using a sharp knife, make a few shallow cuts on the skin side of the salmon. Season with salt and spread olive oil to cover the surface well.

Warm up a skillet with medium-high heat, pour in olive oil. Put in the salmon and saute well. Seasoning with salt and pepper. Transfer to a plate.

In the same skillet, add some cherry tomatoes and minced scallion. Seasoning with salt and pepper. Transfer to a plate.

In a large bowl, put in the cooked potatoes, mash well. Seasoning with salt and pepper. Pour in milk and mix well. Transfer to the serving plate.

Place the cooked salmon on the mashed potatoes, garnish with cherry tomatoes and parsley.
