Ingredients:
  • 1.5 lb. Salmon
  • 2 tbsp. Butter
  • 1.5 tbsp. White Wine
  • 0.25 cup Shallot
  • 1 cup Heavy Cream
  • 0.25 cup Parsley
  • 1 tbsp. Olive Oil
  • 1 pinch Salt
  • 1 pinch Black Pepper

Clean the salmon and peel it. Keep the skin. Place on an oven tray, seasoning with salt. Spread olive oil well. Cover and press on top. Transfer to the oven, and bake at 375°F (190°C) for 30 minutes.

Meanwhile, seasoning the meat with salt and pepper on both sides. Set aside.

Warm up a skillet with medium-high heat, put in butter and salmon. Cook for 6-8 minutes, or until cooked about three quarters of the way through. Add in minced shallot. Whisk in white wine and heavy cream, and cook for 2 more minutes. Seasoning with salt and pepper. Transfer to the serving plate.

In the same skillet, sprinkle some parsley and mix well with cream and butter as sauce. Baste on the cooked salmon.
