A healthy version of shrimp fried rice? You got it! Prawns coated in paprika sauce with cauliflower rice on the side is the perfect no-guilt but still tasty dinner!

Ingredients:
  • 11 oz. Prawn
  • For Prawn Marination
  • to taste Ground Salt
  • to taste Ground Black Pepper
  • 1 medium Egg
  • 1 tbsp. Cornstarch
  • 5 oz. Bacon
  • 2.2 lb. Cauliflower
  • to taste Ground Black Pepper [For Cauliflower & Bacon]
  • 2 tbsp. Cooking Oil [For Sear Prawns]
  • 2 stalks Scallion
  • For the Prawn Sauce
  • 3 cloves Garlic
  • 0.7 oz. Ginger
  • 1 medium Jalapeno Pepper
  • 1 tsp. Paprika Powder
  • 1⅓ tbsp. Sugar
  • 1/2 tbsp. Soy Sauce
  • 1 tbsp. Cooking Wine
  • 1/3 cup Chicken Broth
  • to taste Salt
  • to taste Ground Black Pepper
  • 1⅓ tbsp. Lemon Juice
  • 0.12 tbsp. Cornstarch Slurry

Carefully cut the back of the non-head prawns, peel and devein.

Combine the prawns with ground salt, ground black pepper, an egg and cornstarch in a deep plate, marinate for 10 minutes.

Slice the bacon into small pieces.

Add the sliced bacon into a large pan and sauté.

Meanwhile, cut cauliflower into pieces small enough to grind in a food processor.

Once the cauliflower is fully crushed, add it into the pan, stir-fry with bacon.

Add the ground salt and ground black pepper to the pan. Dice scallions and add them in.

In another large pan, add oil.

Add the marinated prawns and fry until golden brown.

When the prawns are ready, take them out.

Dice garlic, ginger, and jalapeno pepper add to the pan.

Add paprika powder, sugar, soy sauce, cooking wine, chicken broth, salt and black pepper.

Put prawns back into the pan. Add fresh lemon juice and bring it to a boil. Add cornstarch slurry.

On the serving plate, put the cauliflower rice on the bottom and prawn above. Drizzle sauce and garnish with scallions.
