Salted duck eggs are rich in protein, amino acids, essential fatty acids and minerals. The white is salty, but the yolk inside is a savory delicacy. Chef John shows you simple recipe to make salted duck eggs at home.

Ingredients:
  • 10 count Fresh duck eggs, cleaned
  • 70 oz. Water
  • 7 oz. Salt
  • 0.25 cup Hard liquor (Distilled spirit)
  • 3 count Star anise
  • 1 tbsp. Sichuan peppercorn

In a large container, add water, salt, hard liquor, star anise and Sichuan peppercorn. Mix till salt is dissolved.

Carefully add cleaned fresh duck eggs.

Seal the container and marinate for 15 days.
