Sautéed Deep Fried Prawns | Chef John’s Cooking Class
PRE TIME: 15 min
COOKING TIME: 15 min
TOTAL TIME: 30 min
- 14 ㅤ Tiger prawns
- For Frying
- 1½ Qt Cooking oil
- 1 tbsp. Corn starch
- Sautéed Deep Fried Prawns
- 1 tbsp. Cooking oil
- 1 tbsp. Ginger, minced
- 1½ tbsp. Green onion, chopped
- 2 tbsp. Shaoxing wine
- 3 tbsp. Soy sauce
- 2 tbsp. Sugar
- 1 tsp. Maggi seasoning
- 1/2 tsp. Sweet black rice vinegar
- 1 tsp. Sesame Oil
- 1/8 tsp. White Pepper
Preparation of Prawns: Cut along the outer edge of the shrimp's back, about 1/4-inch deep. Carefully remove and discard the vein.
Preparation of Ingredients: Mince the ginger and finely chop the green onion. Set aside.
Coating the Prawns: In a mixing bowl, coat the shrimps evenly with cornstarch. This step ensures that the cornstarch absorbs some of the moisture, keeping the shrimp tender during the deep frying process.
Deep Frying: In a deep frying pan, heat the cooking oil to 400°F/200°C. Once the oil is hot, quickly deep fry the shrimps for approximately 1 minute or until they turn golden brown.
Draining the Prawns: Using a slotted spoon, remove the shrimps from the oil and drain them on a paper towel to remove any excess oil.
Sautéing the Ingredients: In a separate cooking pan over medium heat, add a tablespoon of cooking oil. Add the minced ginger and chopped green onion. Fry for about 15-20 seconds or until they release a fragrant aroma.
Adding the Sauces: To the same pan, add the Shaoxing cooking wine, soy sauce, sugar, Maggi Seasoning, and sweet black rice vinegar. Stir the mixture well to combine all the flavors.
Final Touch: Add the deep-fried shrimps to the pan. Drizzle with sesame oil and sprinkle with ground white pepper. Quickly stir to ensure the shrimps are well-coated with the sauce.
Transfer the sautéed deep-fried prawns to a serving dish and enjoy while hot!
