  • 2 oz Rice Vermicelli
  • ¼ cup Ginger, Sliced
  • 2 tbsp Cooking Oil
  • ¼ cup Green Onions, Cut Into 1/2 Inch Pieces.
  • 6 Tiger Shrimp
  • ½ tbsp Shaoxing Wine
  • 4 cups Chicken Broth
  • 5 Scallops
  • 3 oz Shiitake Mushroom
  • 4 oz Squid Rings

  • 5 oz Clam
  • 1 cup Pea Shoots

Soak the dried rice noodles in 140°F/60° warm water for 10 minutes.

Pour oil in a casserole over medium heat and add sliced ginger and green onions. Stir the tiger shrimps until the they change color and then pour them into the chicken broth.

After it is boiling, add the fresh scallops, fresh shiitake mushroom slices, squid, salt and white pepper.

Then pour in the soaked rice noodles and cook the clams for 1-2 minutes.

Finally put in the bean sprouts and cook until it is boiled, then turn off the heat.
