Ingredients:
  • Cook the pasta
  • 78 oz. Spaghetti fresh egg pasta
  • 1 qt. Boiling water
  • 1 tsp. Salt
  • Heirloom Tomato Sauce
  • 2 tbsp. Extra virgin olive oil
  • 2 ea. Garlic ground/chopped
  • 3 ea. Anchovies
  • 1 tbsp. Oregano fresh leaves
  • 1 ea. Chile Arbol whole
  • 2 large Heirloom tomatoes chopped
  • 3 tbsp. Red wine vinegar
  • 1/8 tsp. Salt
  • 1/2 tsp. Sugar granulated
  • 1/2 cup Boiling water
  • Garnish
  • 3 slices Cucumber slices
  • Pepper, to taste
  • Olive oil

Place the pot with water to boil over medium-high heat. Add salt to the water.

Heat on high a pan, add oil, garlic chopped, chile, and anchovies and cook for 2 minutes.

Add the tomatoes, red wine vinegar, salt, sugar and boiling water, and let cook for at least 10 to 15 minutes.

Remove the pasta Al Dente (still hard and undercooked) from the water and transfer in the pan with the sauce where it will finish cooking. it will be necessary to transfer some of the pasta water to the sauce when it gets too thick. So, keep using pasta water to adjust the consistency of the sauce.
