Fresh spaghetti is SO easy to make! This homemade pasta recipe uses just 5 ingredients – flours, eggs, olive oil, and salt – and it comes out perfect every time. Plus tips on how to roll out your pasta by hand or using a pasta maker.

Ingredients:
  • Pasta dough
  • 2 cup Flour (all-purpose)
  • 1 cup Semolina flour
  • 6 large Eggs
  • 1 tsp. Salt
  • 1 tbsp. Extra virgin olive oil

Pour the flours on a clean work surface. Use your hand to create a depression in the flour. Crack your three eggs into the depression. Mix eggs, flour, oil, and salt with your hands until a shaggy dough forms. Knead with dough hook until the dough is smooth and elastic, about 10 minutes. Cover the dough and let rest at least 30 minutes.

Cut the dough in half, cover and reserve the dough.

Form the dough into a rectangle and roll it through the pasta machine, 2 or 3 times, at its widest setting. Guide the sheet of dough with the palm of your hand as it emerges from the rollers.

Reduce the setting and crank the dough through again, 2 or 3 times. Continue until the machine is at its narrowest setting. The dough should be paper-thin.
