  • 7 oz. Rice
  • 1.5 oz. Glutinous Rice
  • 5 oz. Water
  • 2 oz. Ground Walnut
  • 1 oz. Brown Sugar
  • 1 tbsp. Cooking Oil

Grind the rice and glutinous rice mixture finely into a powder form with a grinder or food processor.

Pour the ground rice flour into a bowl. Add 1 cup of water into a sprayer bottle. Spray 1/10 of the water on the rice flour.

Repeat it until the 130g water is added to the rice flour and fully mixed.

Sift the ground rice flour mixture into a bowl. If any rice pieces are too big to sift.

Grind them again until they can be sifted.

In a medium bowl of ground walnut, add the brown sugar.

Mix thoroughly.

Grease muffin tins with cooking spray - vegetable oil spray, and use a pastry brush to make sure the tins are fully covered with the oil.

Pour ¼ cup of the rice flour mixture into the muffin tin, gently pad the mixture to spread evenly. Then, add ⅛ cup of the walnut mixture on top, and cover with another layer of ⅓ cup of the rice flour mixture. Repeat this step to fill the 6 cup muffin tin.

Place the muffin pan in a bamboo steamer, cover.

Steam over boiling water on medium heat for 10 minutes until the rice cake is fully cooked.
