Bamboo Shoots with Oyster Sauce is a healthy dish you can add to your meals. It is not only refreshing but very flavorful as well. It’s a classic recipe that you can easily master.

Ingredients:
  • For The Bok Choy
  • Blanch
  • 1 qt Water
  • 1/8 tsp. Salt
  • 1/8 tsp. Baking soda
  • 9 oz. Small Bok Choy Sum
  • Stir-fry
  • 1 tbsp. Cooking oil
  • cup Chicken broth
  • 1/8 tsp. Salt
  • 1/2 tsp. Sugar
  • tbsp. Potato starch slurry(1 to 2 ratio of cornstarch to water)
  • 1 tsp. Cooking oil
  • For The Winter Bamboo
  • 1 cup Cooking oil
  • 1 large Winter bamboo shoot
  • 1/2 cup Chicken broth
  • 1 tbsp. Oyster sauce
  • 2 tsp. Light soy sauce
  • 1/2 tsp. Sugar
  • tbsp. Potato starch slurry(1 to 2 ratio of cornstarch to water)
  • 1 tsp. Sesame oil

Peel the fresh winter bamboo shoots, remove the hard bottom part, cut the remaining tender into rough chunks.

In a medium stockpot over high heat, bring enough water to a boil. Add a little bit of salt and baking soda. This is to keep the vegetable green in color. Quickly blanch the Small Bok Choy Sum for 30 seconds.

After cooling down in ice-cold water, drain to dry.

Stir fry small bok choy sum. In a wok over medium-high heat, add oil, chicken broth, salt, and sugar, then add small bok choy sum, cook for 1 minute to let the vegetables absorb flavor.

Add in potato starch slurry to thickening. Drizzle a little bit of oil to make it shiny at the end. Note: Mixing the slurry well before adding it in.

Stir fry winter bamboo shoots. In a wok over medium heat, add oil, when the oil temperature reaches 140°F/60°C, add winter bamboo shoots, stir fry for 1-2 minutes. (Fully cook winter bamboo shoots in oil. )

Discard excessive oil, add chicken broth, oyster oil, light soy sauce, and sugar. Cover with a lid, then turn the heat to low, simmer for 7-10 minutes to fully cook the winter bamboo shoots. (Take time to simmer the winter bamboo shoots to allow them to absorb flavors. )

Add potato slurry and stir until the bamboo shoots are completely coated. Drizzle sesame oil and mix well.
