Savory and sweet, this Tangerine Beef is loaded with deliciously chewy beef and bright, subtly bitter flavor from aromatic dried tangerine peels. It is a Sichuan specialty and tall on flavor.

Ingredients:
  • 1 lb. Beef
  • 1 tbsp. Cooking Oil
  • 1 oz. Garlic
  • 1 stalk Green Onion
  • 4 piece Ginger slices
  • 1 tbsp. Sichuan Peppercorn
  • 1 tbsp. Dried Red Chili Pepper
  • 1 tbsp. Peppercorn Oil or Chef Made Peppercorn Oil (See "Chef john's signature oils" video)
  • 1 tbsp. Cooking Wine
  • 2 count Star Anise
  • 2 count Tsaoko
  • 2 count Cardamom
  • 5 pieces Soaked Dried Tangerine Peel
  • 1 count Tangerine Peel
  • 1.5 tbsp. Rock Sugar
  • 1.5 tbsp. Pixian County Bean Paste
  • 1 tbsp. Shaoxing Cooking Wine
  • 2 cup Water
  • 1 tbsp. Soy Sauce
  • 0.5 tsp. Salt
  • 1 tbsp. Sichuan Peppercorn Oil or Chef Made Sichuan Peppercorn Oil (See "Chef john's signature oils" video)
  • 1 tbsp. Chili Oil or Chef Made Chili Oil (See "Chef john's signature oils" video)
  • 1 tsp. White Sesame
  • 1 tsp. Green Onion

Soak the dried tangerine peel in warm water for 1 hour to rehydrate, then drain.

Peel the tangerine and cut away as much of the white pith as possible. This will remove the bitterness.

Cut the beef loin into 1x2-inches slices about 1/4-inch thick.

In a wok, bring the heat up slowly until the oil is between 350~375°F/ 180~190°C (too low and you'll get greasy food, too high and it'll burn). Deep fry the beef slices for 3 to 5 minutes.

Remove from the wok. Re-fry at higher temp quickly for 1 minute. Drain the fried beef.

In a wok over medium heat, add 1 tablespoon of cooking oil, garlic, ginger slices, Sichuan peppercorn, and dried red chili. Stir fry until fragrant.

Then, add peppercorn oil, star anise, Tsaoko, Cardamom, soaked dried tangerine peels, tangerine peels, rock sugar, Pixian bean paste, and toss to mix well.

Add the fried beef and cooking wine in the wok and toss to combine. Then, add ①2 cups of water, ② Soy sauce 1tbsp / 15ml, ③Salt to taste, and simmer for one and 1 half hours.

Finally, drizzle some peppercorn oil and chili oil. Serve immediately.
