Tumeric Chicken is creamy, spicy, savory and so easy to make at home! This dish’s complex flavor comes from all the dynamic ingredients like lemongrass, coconut milk, and, of course, turmeric powder! Have fun with this hearty dinner!

Ingredients:
  • 23 oz. Chicken Leg
  • 3.5 oz. Onion
  • 2 tbsp. Olive oil
  • 2 oz. Scallion
  • 0.7 oz. Lemongrass
  • 1.4 oz. Ginger
  • 4 Cloves Garlic
  • 3 Pieces Bay leaf
  • 1 1/2 cup Chicken stock
  • 1 2/3 cup Coconut milk
  • 1.7 oz. Red chili
  • 1.6 oz. Green chili
  • 1 tbsp. Lemon juice
  • 1 tbsp. Cooking wine
  • 7 oz. Spaghetti
  • 1/2 tsp. Salt (For marinade chicken)
  • 1/2 tsp. Black pepper (For marinade chicken)
  • 0.1 oz. Turmeric powder
  • 0.1 oz. Coriander powder
Directions:

Marinade the chicken leg with olive oil, salt, and pepper.

Fry the chicken until both sides are golden brown. Set them aside.

Dice lemongrass, onion, garlic, and ginger. Stir-fry a bit before adding cooking wine, flambé it, then add turmeric powder, coriander powder, and lemon juice. After everything is reduced, add coconut milk, bay leaf, and chicken stock, season with salt and pepper then mix well and put the chicken back in the pan, and simmer in medium heat for about 20 mins.

Meanwhile, boil water for the spaghetti. Add ½ tsp of salt and cook the spaghetti for about 8 minutes, or just under al dente.

Slice scallion, red chili, and green chili. Add them into the chicken, cook for 2 minutes. Take the chicken out before putting the pasta into the pan. Cook until pasta is fully ready, and serve. Enjoy!
