Panna Cotta with a twist that’s what this is! The citrus zang from the yuzu is complimented with the tangy buttermilk this tantalizing sweet speaks balance with that decadent light creaminess a subtle sweetness it’s truly a stop to what you’re doing don’t bother me I’m eating. This will impress someone you see for yourself.

Ingredients:
  • 1/3 cup Sugar
  • 1 cup Heavy cream
  • 1 tsp. Vanilla extract
  • 1 ea. Lemon zest
  • 1 tbsp. Gelatin powder
  • 2 cup Buttermilk
  • 1 tsp. Yuzu juice
  • 2 cup Mixed berries
  • 1 ea. Lime zest
  • 1/2 tsp. Juice
  • 1 tbsp. Sugar

In a small pot, add the heavy cream, sugar, vanilla extract, lemon zest, until sugar is dissolved and liquid is hot.

Bloom the gelatin powder with 1/4 cup of buttermilk.

Take the cream mixture off the heat and mix in the gelatin mixture and whisk well and then add the remaining chilled buttermilk and the Yuzu juice right at the end.

Pour the mixture into individual serving bowls and place in refrigerator for at least 15 minutes or until gelatin has set.

In a small bowl toss the berries with a touch of sugar and a dash of fresh lime juice

Decorate the set panna cotta in the center with the vibrant berries salad.
