Prepare the famous French Palmier Cookies at home. It is a puff pastry with butter but a crunchy but light taste that melts in your mouth. You could easily change the taste to sweet variations as cinnamon or chocolate or savory as parmesan and or garlic. Try and enjoy!

Ingredients:
  • 5.2 Oz. All-purpose flour
  • 0.7 Oz. Sugar
  • 0.45 Tsp Salt
  • 2 Fl. Oz. Unsalted butter
  • 2 Fl. Oz. Water
  • 3.5 Oz. Unsalted butter (for filling)
Directions:

Mix all the ingredients of the dough into a dough and freeze at -18 °C for 30 minutes.

Put butter on parchment paper evenly, roll them out to a thickness of about 3mm, and refrigerate them at 4 °C for 30 minutes.

Put butter on half of the dough, fold it in half, and freeze at -18 °C for 15 minutes.

Roll out into a rectangle, fold both sides in the middle, and then fold in half. Freeze at -18 °C for 15 minutes.

Roll out into a rectangle, about 3mm thick, divide into 6 equal parts, fold up on both sides, fold up, fold up again, and freeze at -18 °C for 15 minutes.

Cut each piece about 1cm thick, dip in sugar, bake at 338 °F /170 °C for 30 minutes.
