With a delicious spicy ginger sauce, this Ginger Chicken is made with lots of fresh ginger and cooked down into a savory and flavorful meal. Everything cooks in one pot or pan for maximum flavor and minimum cleanup!

Ingredients:
  • 1 lb. Chicken With Skin And Bone-In, Cut Into Chunky Pieces
  • 5 oz. Ginger, Thinly Sliced
  • 1 stalk Green Onion, Finely Chopped
  • 0.25 cup Light Soy Sauce
  • 0.5 tbsp. Dark Soy Sauce
  • 2 oz. Rock Sugar
  • 1 tbsp. Cooking oil

In a cooking pan, add a tablespoon oil, and stir fry sliced ginger until fragrant and lightly golden.

Add chicken, stir fry until the chicken pieces turn greasy and golden. Then, add light soy sauce and dark soy sauce. Keep stir-frying for another 20 seconds.

Add water and rock sugar. Make sure the chicken pieces are submerged in water.

Cover the lid and stew over low heat for 30 to 40 minutes until the liquid is cooked down and almost evaporated completely.

Remove from heat and transfer to a serving plate. Sprinkle with finely chopped green onion.
