Ingredients:
  • Dough:
  • 1 oz. Unsalted butter
  • 5.2 oz. All-purpose flour
  • 0.07 oz. Salt
  • 0.1 oz. Sugar
  • 0.25 cup Water
  • 2.82 oz. Unsalted butter
  • Egg mixture:
  • 0.7 oz. Whole egg
  • 2 Large Egg yolk
  • 1.5 oz. Sugar
  • 0.63 cup Whipping Cream
  • 0.31 cup Milk

The frozen butter cuts are placed on butter paper and rolled to a thickness of about 3mm on average.

Mix all the ingredients of the dough into a dough, and refrigerate for 30 minutes.
