Balloon buns, baslama, or flatbread are classic homemade buns for kebabs or barbecue, which are available in the restaurant. We have learned to make them, so we can share with you the complete process of making these great flatbreads.

Ingredients:
  • 0.7 cup Water
  • 0.7 cup Yogurt
  • 1.4 tsp. Dry yeast
  • 1 tbsp. Sugar
  • 1 tbsp. Salt
  • 1 tbsp. Oil
  • 21.1 oz. Soft flour for mixing and a little more to sprinkle on the table
Directions:

In one bowl put in the yeast, sugar, and 1 tbsp of flour. Add a bit of warm water and stir it.

Put this aside for a few minutes until the yeast activates. While we're waiting for that, we can get the other ingredients ready. Put the flour in a bowl. About half of it, add salt and mix it. And now wait for the yeast.

Now that our yeast is activated, you will see that by the bubbles on top. Add it to the flour. Add water and yogurt. And stir everything together. Mix it well, so there aren't any blobs or lumps.

Add a bit more flour. And mix it, again and again, and add flour. You can do all this by hand, or with a dough mixer. You can mix this dough only using your fingers. And add the rest of the flour. And now finish with kneading.

The dough is done, it needs to stay a bit sticky. Coat it in 2 tbsp of sunflower oil. Put the sides in the middle, then round it. Leave it in a warm place to rest.

Get it out of the bowl. Put a bit of flour on the table. This is extra flour. Use a bit more flour for the kneading of the dough. And a bit more when we are stretching it.

Split the dough into 6 even parts or into as many parts as you want. You can do this with all of the dough balls. Put all of the sides in the center.

And now roll it on the table. Leave the balls. To rest for about 10 - 15 minutes.

Now that the balls have rested, get one of them. Take the first one you made and put it on a kneading board or table that has flour on it. Dip your fingers in flour and press it and stretch it. Then flip, do it as much as the dough allows.

You can stretch it at about 15 cm. Leave it aside. Take the second one and repeat. Now that stretching is done. Put them so that you can cover them with a cloth. Leave them to rest for a couple of minutes.

Now that the raising of the dough is done. Here goes the second round of stretching. Start with the first one. You can make these buns smaller. and you make more or make bigger ones and make less. Depending on how big your pan is. Now that that is done. Cover it with a cloth. Until the pan heats up.

The pan needs to heat up a lot, like on maximum heat. Take one of them and put them on the pan. We're baking it for about 30 seconds until small balloons pop up. Help it to flip with something. You can bake it in a pancake pan. Now that the bun is inflated take it carefully and flip it. So that the other side cooks a bit. Look at how the air flows out.
