These Pizza-flavored scones are made with ingredients that almost all Koreans love. They are easy to do and very delicious.

Ingredients:
  • 7 oz. Cake flour
  • 2.82 oz. Unsalted butter
  • 0.7 oz. Granulated sugar
  • 0.2 tsp. Salt
  • 1.2 tsp. Baking powder
  • 1 oz. Grated Parmesan cheese
  • 0.2 tsp. Ground black pepper (If you don't like pepper, you can omit it)
  • 2.5 oz. Tomato juice
  • 0.7 oz. Canned jalapenos
  • 0.8 oz. Black olives
  • 6.3 oz. Mozzarella cheese
  • 6 Slices Pepperoni
Directions:

Remove the moisture of the olives and jalapenos as much as possible and chop them finely.

Cut the mozzarella cheese into square shapes of about 30g each.

Put the cold ingredients and butter in the food processor, pulse every 3 seconds, and chop the butter until the butter particles are as small as a grain of rice.

Add cold tomato juice and mix again by pulsing the food processor.

When the dough becomes crumbly, add olives and jalapenos, mix lightly a few more times, and then transfer the dough to the workbench.

Do not knead it, just lightly clump it together as if pressing it down, and stack it up to make a lump.

Rest the dough in the refrigerator for 1 hour.

Divide the rested dough into six pieces (about 70g each).

Make the divided dough into a flat shape, and wrap the mozzarella cheese with the dough. *You can use shredded cheese instead if you don't have the whole mozzarella cheese.

Dig a hole in the middle of the scone dough, put the pizza sauce on it, and put pepperoni on it.

Beat the egg and apply the egg wash to the surface of the scone with a brush.

Bake for 24 minutes at 374 °F/190 °C (upper heat) and 338 °F/170 °C (lower heat). * Unox/Smeg/Gierra, etc. Convection oven: at 180 degrees Celcius for 24 minutes * Baking time and temperature may vary depending on mold capacity and oven performance.
