Ingredients:
  • 4 ea. Large boneless skinless chicken breasts
  • 4 slices Large slices prosciutto
  • 1 pinch Salt
  • 1 pinch Pepper
  • 3 tbsp. Salted butter
  • 1 tbsp. Olive oil
  • 4 ea. Cloves garlic minced
  • 1 cup Cooking sherry (dry or medium-dry)
  • 2 cup Low-fat sour cream
  • 2 large spring Fresh sprigs rosemary
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 tsp. Shredded parmesan as garnish optional

Season the chicken breast slices with salt and pepper to taste. Wrap each piece of chicken with a slice of prosciutto ham and secure it in place by weaving a skewer through the chicken and prosciutto.

Heat the butter and oil together in a skillet over medium to high heat. Swirl the fats around in order to coat the entire base of the skillet.

Add the chicken pieces to the skillet and sear for 3-4 minutes on each side, depending on thickness. You want the chicken to be browned on both sides and nearly cooked through. Remove from the skillet and set aside.

Add the remaining olive oil to the skillet and saute the garlic for 1-2 minutes or until fragrant and translucent. Add the sherry to the skillet and deglaze the pan allowing the alcohol to cook out, reduce the liquid to about half. this allows a more intense flavor.

Maintaining a gentle heat gradually stir in the sour cream 1 cup at a time, until the cream sauce forms. Immerse the chicken pieces into the sour cream sauce along with the rosemary, Let simmer gently for a few minutes. Turn off the heating season further if you wish.
