A nice refreshing hearty soup with a subtle smokey flavor, a full rich bodied soup with a creaminess, and an abundance of delicious textures from the chunky vegetables and delicately placed salmon. A fulfilling dish on a cold day.

Ingredients:
  • 4 tbsp. Salted butter
  • 1/2 lb. Bacon
  • 1 ea. Onion
  • 3 stalks Celery, diced
  • 4 ea. Garlic
  • 1 ea. Jalapeño
  • 2 ea. Corn
  • 10 ea. Fingerling potato, sliced
  • 1/2 cup Flour
  • 4 cup Chicken stock
  • lb. Salmon
  • 2 cup Heavy cream
  • 2 tbsp. Green onion
  • 1/2 tsp. Pepper
  • 1/2 tsp. Salt

In a large, heavy stockpot, melt butter over medium heat. Add the bacon and cook, stirring often, until bacon begins to crisp, about 8 minutes.

Add onions, celery, garlic, jalapeños, scallions, corn, and potatoes and cook, stirring often, until softened, about 8 minutes.

Add flour and chicken stock bring to boil, place the salmon pieces on top of the simmering soup.

Turn the heat down to a gentle simmer, and stir in heavy cream.

Top with fresh chives or extra scallions and salt.
