A vibrant and luxurious meatloaf that would make for a beautiful dinner gathering. The good cuts of marbled beef produce a succulent and juicy result, the glaze adds a glossy coat and a bit of a kick that rounds out the flavors to the dish. The results are best when you grind the meat yourself. Try my fluffy mash potatoes and the roasted brussels sprouts with their citrus twist to create a perfect textural and delightfully colorful meal.

Ingredients:
  • Meatloaf
  • 18 oz. Ground chuck roast
  • 18 oz. Ground sirloin roast
  • 2 ea. Carrot, diced
  • 3 large Celery, diced
  • 1/2 small Onion, diced
  • 4 ea. Garlic, chopped
  • Seasoning
  • 1 tsp. Chili powder
  • 1 tsp. Dried thyme
  • 1/2 tsp. Paprika
  • 1 tbsp. Sea Salt
  • 1/2 tsp. Pepper
  • 1 cup Bread crumbs
  • 1 large Egg
  • Glaze
  • 1/2 cup Ketchup
  • 1/4 cup Tomato paste
  • 1 tbsp. Chipotle chile
  • 1 tbsp. Adobo sauce
  • 2 tbsp. Brown sugar
  • 1 tsp. Onion powder
  • 1 tsp. Garlic powder
  • Mashed Potatoes
  • 1 qt. Boiling water
  • 1 1/2 tbsp. Salt
  • 1/8 tsp. Pepper
  • 3 large Potato
  • 5 tbsp. Butter
  • 1/2 cup Milk
  • 1 tsp. Olive oil
  • For The Brussels
  • 2 tbsp. Butter
  • 1 tsp. Olive oil
  • 1/2 cup Shallots
  • 2 tbsp. Garlic
  • 2 lb. Brussels
  • 1 tsp. Salt
  • 1/2 tsp. Pepper
  • 3/4 cup Chopped walnuts
  • 1/2 ea. Lemon juice
  • 1/2 cup Parmesan cheese

Preheat oven to 350°F/177°C.

Cut chuck roast and sirloin roast into 1 1/2-inch cube.

Add to blender and make ground meat.

In a large bowl, add the ground meat, beef, carrot, celery, onion, and garlic.

Add all [Seasoning] ingredents.

Use your hands to mush and mix these ingredients together until well combined.

Add bread crumbs and egg, mix well.

Add the meat mixture to a loaf pan.

Add ketchup and tomato paste in a large pan, keep adding chipotle chile, adobo sauce, dark brown sugar, onion powder, and garlic powder. Stir well.

Place the [Glaze] on top of the meatloaf.

Bake for 45 min.

Place the potatoes into a large pot, and cover with salted water. Bring to a boil, reduce heat to medium-low, cover, and simmer until tender, 20 to 25 minutes.

Melt 3 tablespoons of the butter with olive oil over medium-high heat in a large saucepan.

Add the shallots and half the garlic and cook for 1 minute.

Add the brussels sprouts and cook until golden brown, about 5 minutes, season with salt and pepper, stirring as needed.

Drain, and return the potatoes to the pot. Turn heat to high, and allow the potatoes to dry for about 30 seconds. Turn off the heat.

Mash the potatoes with a potato masher twice around the pot, then add the butter and milk.

Continue to mash until smooth and fluffy. Whisk in the salt and black pepper until evenly distributed, about 15 seconds.

Add the walnuts, cook for 30 seconds.

Add olive oil to mashed potato and keep mix well.

Add the lemon juice and Parmesan to the brussels sprouts. Stir well.
