  • 1.5 lb. Pork Hock
  • 1 pinch Salt to taste
  • 1 pinch Pepper to taste
  • 2 tbsp. Thyme
  • 1 tbsp. Cumin
  • 2 tbsp. Olive Oil [For Saute]
  • 1 count Onion
  • 2 count Carrot
  • 3 cloves Garlic
  • 0.5 cup Celery
  • 1 cup Chicken Broth
  • 2 tbsp. Tomato Paste
  • 1 count Potato
  • 0.3 cup Parsley
  • 1 count Lemon
  • 1 tbsp. Cornstarch
  • 1 tbsp. Olive oil [Potato Salad]

Preheat the oven to 375°F (190°C).

Clean and try the pork hock skin. Cut it into square pattern. Season with salt, pepper, thyme and cumin.

Add olive oil in a skillet. Pan fry pork hock until the skin turns golden brown.

In the same skillet, add chopped onion, carrots, celery, chicken broth, tomato paste, season with salt and pepper. Then bake at 375°F (190°C) for about 2 hours and a half.

Meanwhile, cook the sliced potatoes in boiling water for 10 minutes and transfer to a mixing bowl. Add minced onion, parsley, lemon juice, salt and pepper, and olive oil. Stir well.

Take out the pork knuckle from oven. Garnish with potato salad. Serve and enjoy.
