Ingredients:
  • 2 ea. Salmon fillet
  • For The Brine
  • 2 cloves Garlic, minced
  • 2 tbsp. Freshly crushed ginger
  • 2 cup Water
  • 1/4 cup Maple syrup
  • 1 tbsp. Peppercorns
  • 1 tbsp. Chili paste
  • 1 large Lemon zest
  • 4 large Lemon juice
  • 2 tbsp. Salt
  • Miso Glaze
  • 1 tbsp. Water
  • tbsp. Miso
  • 1/2 tbsp. Soy sauce
  • tsp. Honey
  • 1/2 tsp. Chili paste
  • 1 tsp. Ginger, minced
  • 1 tbsp. Olive oil
  • Spray oil
  • Fried rice
  • 2 tbsp. Olive oil
  • 3 cup Cooked rice
  • 1 tsp. Garlic, minced
  • 1 tsp. Ginger, minced
  • 2 tbsp. Soy sauce
  • 1 tsp. Chili paste
  • 1 cup Kimchi
  • 1/2 tsp. Salt
  • 3 large Eggs
  • Garnish
  • 1/2 tsp. Black sesame
  • 1 tsp. Chives
  • 1 tbsp. Cilantro

Pour the water into a large bowl, add garlic, ginger, maple syrup, lightly crush the peppercorns, chili paste, lemon zest, lemon juice, and salt.

Put the salmon in the brine, and chill in the refrigerator for at least 4 hours.

Take the salmon out of the brine, pat it dry using paper towels, then cut it into serving-size pieces. Discard the brine.

Mix all miso glaze in a mixing bowl.

Preheat your oven to 400°F/200°C and spray oil on a baking sheet with cooking spray.

Line the salmon up on the baking sheet. Evenly spread half of the miso glaze over the top, Bake for 7-8 minutes.

Heat the oil add the cooked rice, soy sauce, ginger, chili paste, kimchi, and salt, and stir-fry for a few minutes.

Make a well in the center and add the eggs. Scramble the eggs in the center of the pan and then mix them throughout the rice.

Serve with chili paste, sesame oil, sesame seeds, green onions, whatevs kinda thing you like.
