These Italian-inspired Squash blossom ricotta gnudi are a real specialty. A lightly seasoned mix of eggs, Parmesan, ricotta cheese, and lemon zest are the basis of this dish. Formed into small balls, wrapped into the squash blossom, steamed and served with Parmesan consommé will change your mood in second. Try and enjoy!

Ingredients:
  • 8 Oz. Gnudi
  • 3 Cup 00 Flour
  • 3 Oz. Squash blossoms
  • 1 Tbsp Oil
  • 1/2 Cup Clear broth
Directions:

Get the Gnudi ready: finely grate 1 ounce Parmesan cheese (about 1/2 cup) and place in a large bowl. Add 1 containers whole-milk ricotta cheese, 1 large egg, lightly seasoned with salt and mix well. Add a bit of lemon zest until just combined. Create small balls from this mix with an ice cream spoon.

Put them into flour and form small balls. Flatten them with your hands, make a small hole in the middle and let them sit in flour overnight.

Cut the end squash flower and open it. Wrap the balls into the squash flowers.

Steam them in the steamer for 5 minutes or until fully cooked. Serve with some oil and clear broth.
