Ingredients:
  • 1 oz. Mung bean vermicelli
  • 12 Jumbo Shrimp
  • 1/4 cup Cooking oil
  • 1/3 cup Garlic, minced
  • 1/4 tsp. Sugar
  • 1 1/2 tbsp. Oyster sauce
  • 1/8 tsp. White pepper
  • 1 tbsp. Cornstarch mixture (1 to 2 ratio of cornstarch to water)
  • Shredded green onion & red pepper, to taste

Soak the mung bean vermicelli in cold water for 1-2 hours for later use. Prepare about 1/3 cup of minced garlic for later use, and cut an appropriate amount of shredded red pepper and green onion for later use.

First cut off the shrimp whiskers and clean them, put the shrimp flat on the cutting board, and gently push the knife back from the middle of the head until the tail end is split in half, being careful not to cut the tail, and then pick out the shrimp line. When doing this step, you can prepare a bowl of water next to it, and it is not easy to stick to your hands when taking the shrimp line. (Note: The shrimp must be very fresh to taste good. When opening the shrimp, you must be careful in this step, pay attention to safety, and do not hurt the harvest. If you dare not use a knife, you can also use scissors.)

Prepare a rectangular plate, drain the soaked vermicelli and spread them flat on the plate, and then spread the processed shrimps evenly on the vermicelli one by one, with the tail in the middle, the head facing out, and the shrimp side. face up.

Boil minced garlic: Use a small frying pan, turn on medium heat, pour in oil, add minced garlic 3tbsp and fry for 3-5 minutes until light yellow, then turn off the heat, and continue to fry until golden using the remaining temperature in the pan Just yellow. Note: When boiling the minced garlic, keep stirring, and you must master the heat and not overheat, otherwise it will burn.

Adjust the garlic juice: Put the fried cooked garlic into a medium bowl, then add 3 tbsp raw minced garlic, sugar, oyster sauce, white pepper powder and water starch (corn starch + water) and stir well. Note: The ratio of raw garlic to cooked garlic is 1:1. In this step, the oyster sauce can be more or less. If you think the taste is light, you can put an appropriate amount of salt.

Pour the prepared garlic sauce on the shrimp and spread evenly. Put the whole plate of shrimp in the steamer and steam for 6-8 minutes. Note: Wait for the steam in the steamer to come up before adding the whole plate of shrimp.

Lift out the steamed shrimp and add some red pepper and spring onion. Note: In this step, you can also burn some hot oil and pour it on the shredded green onion according to your personal preference. It will taste more delicious.
