Shakh Pilaf is a traditional Azerbaijani dish with lamb meat and dried fruits. Baked in Lavash bread this dish creates a unique combination of flavors.

Ingredients:
  • 7 oz. Chestnuts
  • 10 1/2 oz. Butter
  • 12 oz. Rice
  • 1 oz. Dried apricots
  • 7 oz. Onion
  • 2 Pounds Lamb ribs
  • Black pepper and salt to taste
  • 1/2 cup Raisins
  • 1/2 Large Lemon, to be juiced
  • 10 Pieces Lavash bread
  • A big pinch of saffron
Directions:

Cut the chestnuts shell as per the video. Cook the chestnuts in hot water until soft. Take it out from the shell.

Pour hot water on the saffron and let it soak for 15 minutes.

Add butter to the pan and the chopped onions. Fry the onions.

Take out the onions and add the lamb meat cut into pieces. Season with salt and black pepper.

Add the onions back to the meat. Add the cooked chestnut and mix it. Add the raisins and mix them all together. At the end add the dried apricots and mix them together.

Add the saffron water and a juice of a half lemon, and let it cook on moderate heat until fully cooked.

In the meantime cook the rice.

Take a big baking dish and coat it with oil. Add Lavash bread on the sides of the dish and paste them with oil also.

Add a layer of cooked rice to the bottom of the dish. Then add the meat mix to it and add another layer of cooked rice again. Add a little saffron water on top of it.

Cover it with the Lavash bread and paste some oil on top of it.

Bake until the top of the bread is nicely golden brown. Enjoy!
