Ingredients:
  • 7 oz. Sugar
  • 1 oz. Lemon juice
  • 3.5 oz. Water
  • Edible pigment
  • 7 oz. Sugar
  • 2.1 oz. Water
  • 4.5 oz. Starch syrup
  • 1 oz. Gelatin
  • 5.2 oz. Water
  • Edible pigment
Directions:

Grease the mold with cooking oil.

Mix the sugar with lemon juice and water. Add red edible pigment into the pot. Start to boil it. Turn off the heat when the syrup starts to boil thick. Cool the syrup completely.

Mix the gelatin with water. Don't use hot water as the gelatin doesn't blow, it just clumps. Use cold water.

Mix water with sugar and starch syrup. Start to boil it on medium heat. Turn off the heat when the syrup starts to boil thick. You can put gelatin into the syrup and melt it at this temperature. Set the hand mixer to high speed and beat it into a foam.

Prepare green and blue colors and color them in separate bowls. The marshmallows harden very quickly, so please mix them quickly.

It's hard to mix them by hand, so I'll use a hand mixer. When you're done mixing, put it in a piping bag. Fill the marshmallows into the mold quickly. If the marshmallow hardens, heat it up in the microwave.

Add the syrup to the mold by using a sauce tube or a piping bag.

Cover it with another layer of blue foam and cover it with another mold. Put into refrigerator for an hour.
