Bubble Tea, a light refreshing drink now popular originated in Taiwan.  The basis of it is the Tapioca Pearl (Boba). The method of kneading using boiling water is called ‘ikbankuk’ – it is often used when making dumplings skin. When you knead it like this, the texture is much chewier than just using cold water. Just knead and make it like a ball and boil it in water. Anyone can make it without failure. Try it !!

Ingredients:
  • 1.4 oz. Water
  • 0.7 oz. Brown sugar
  • 1.8 oz. Tapioca starch
  • 0.25 oz. Cocoa powder
Directions:

Mix tapioca starch and cocoa powder together. Cocoa powder is added to give a dark color. If you do not like the taste of cocoa, you can replace it with the same amount of tapioca starch and add black pigment.

Mix dark brown sugar with water. When the sugar melts and the water boils completely, put out the fire, and add the powder. When it's hot, mix well with a spatula.

When it's roughly a lump, move the dough to the work surface and knead it by hand. Knead well with your hands until the dough is smooth. When the dough is uniform and smooth, make it into several thin sticks.

Use a scraper to cut the dough into small pieces. Roll it into your palm and make it into a small ball shape.

Put the small balls into the tapioca starch. If tapioca starch is not well adhered to the surface of the boba, they'll stick together when boiling in water. Remove all excess starch.

Boil over medium heat for 20 minutes and stir well as it is easy to stick to the saucepan. Pearls become larger when boiled in water. Be careful, if you mold it too big at first, it will be difficult to eat with a straw later!

Turn off the heat and let it sit for 20 minutes. Wash it in cold water several times and rinse it.

Boba will become soggy and mushy when exposed to the air, so you need to store them in sugar syrup, made with sugar and water in a 1:2 ratio. Prepare a milk tea and add the bubbles. Enjoy!
