Ingredients:
  • 2.8 oz. Cake flour
  • 0.5 oz. Cocoa powder
  • 3 Large Eggs
  • 1 oz. Sugar (to mix with the yolk)
  • 2.5 oz. Sugar (to mix with the white)
  • 0.7 oz. Cooking oil
  • 0.7 oz. Milk
  • 0.7 oz. Starch syrup/honey
  • 1 Pinch Salt
  • 1/2 tsp. Vanilla extract
  • 7 oz. Sweetened whipped cream
  • 0.35 oz. Cocoa powder
  • 5.2 oz. Dark chocolate
  • 3.5 oz. Milk chocolate
  • 7 oz. Unsweetened whipped cream
  • 1.7 oz. Butter
  • 0.7 oz. Starch syrup
  • 1 Pinch Salt
Directions:

Mix the cocoa powder with salt, cooking oil, milk, starch syrup/honey. Sieve it through a strainer.

Separate the egg yolks and whites. Mix the yolks with vanilla extract and sugar until it is light yellow.

Beat the whites to a foam. Add sugar and adjust the hand mixer at low speed and stir until sugar melts. At the end whip for three minutes at high speed

Divide the meringue two times and mix it in the yolk dough. Sift in the flour and mix it together.

If the dough is smooth and without any lumps, add cocoa paste and mix. Transfer to a 6" (15 cm) round cake mold with parchment paper. Bake it for 20 minutes at 338 °F/170 °C.

Put a mixture of milk and dark chocolate with starch, butter, and unsweetened whipped cream into a bowl and melt it in a microwave oven. Mix it together, cover, and refrigerate for 2-3 hours.

In the meantime let cool the dough. Whip the whipped cream about 50%. Sift in cocoa powder. Add whipped cream little by little and mix it.

Cut the dough into 3~4 pieces. Spread whipped cocoa cream on the dough. Spread remaining cream very thinly on the surface of the dough.

Take out the cream from the refrigerator. Stir with a spatula to soften the cream. Spread the cream roughly on the top and on the sides in the same way.
