Oatmeal cookies sandwiched together with a cream cheese filling just takes these cookies to another level of heavenly. The molasses and sugar allow for a soft and chewy texture. The rich buttery flavor just sings out alongside the vanilla and cinnamon tones. NOTE: your cookies will keep fresh in an airtight container for 3-5 days alternatively you can wrap then up and freeze them .

Ingredients:
  • For the Cookies
  • 1 cup Unsalted butter, at room temperature
  • 3/4 cup Brown sugar
  • 1/2 cup Granulated sugar
  • 1 tsp. Vanilla extract
  • 2 ea. Large eggs
  • 1 tbsp. Molasses
  • cup Instant oatmeal
  • 1/2 tsp. Salt
  • Dry Ingredients
  • cup Flour
  • 1 tsp. Baking soda
  • 1/4 tsp. Cinnamon
  • For Filling
  • 1/2 cup Unsalted butter, at room temperature
  • 6 oz. Cream cheese at room temperature
  • 1/2 tsp. Vanilla extract
  • cup Powdered sugar, sifted dough

Using a mixer hand held or stand alone. Cream the butter, brown sugars, granulated sugar, and vanilla extract until the mixture becomes fluffy, and light in color.

Add the eggs one by one scraping down the bowl throughout .

Sift the【dry ingredients】together.

Slowly add to the butter mix bit by bit mixing well until smooth. Finally add the molasses and salt, scrape the bowl down to incorporate the mix.

Fold the oatmeal into the mix and then place the whole-mix in the refrigerator for up to an hour.

Preheat the oven to 325°F/ 160°C.

Cream the butter until smooth, then add the cream cheese, vanilla extract and continue mixing until free of lumps. Slowly incorporate powdered sugar mix for a few minutes until fluffy and smooth.

Roll the dough into uniformed sized balls, the mix should be a bit sticky. Lay the balls onto lined baking sheets, about 1 ½ inches apart.

Slightly flatten each ball keeping at least ½ inch gap to allow for spreading during the cooking process.

Bake for approx 15 minutes. remove from the oven and allow your cookies to sit on the baking tray for a few minutes to set, before you transfer them to a cooling rack.

Pipe or spoon the cream cheese filling onto one half of the bottom cookie and top it with the other cookie bottom down. Your oatmeal pies are ready to enjoy,
