Red Snapper Crudo is a perfect appetizer. This light but intensive snapper flavor in a savory sauce will start your digestion before the main dish.

Ingredients:
  • 1 Slice Red snapper
  • 1 tbsp. Cilantro stem
  • 1 1/2 tbsp. Lemongrass
  • 1 tbsp. Onions
  • 1 tbsp. Freshly Ground Ginger
  • 2 tbsp. Fish stock
  • 1.5 cup Lime juice
  • 1/3 cup Orange juice
  • 1 tbsp. Fermented chilies (good baterials for digestion)
  • 1/4 cup Avocado yogurt
  • 2 tsp. Olive Oil
  • Serrano Peppers, to taste
  • Salt, to taste
  • Cilantro leaves (garnish)
Directions:

Cut the red snapper into thin slices and put them on a plate.

Cut the cilantro stems and the lemongrass finely.

Prepare the sauce: In a medium bowl, mix in the chopped cilantro stems and lemongrass. Add diced onions, freshly ground ginger, fish stock, lime juice, orange juice, and fermented chillies.

Spoon the sauce on the snapper. Add avocado yogurt on the top and drizzle with olive oil. Add serrano peppers on the top.

Season with salt and garnish with cilantro leaves. Enjoy!
