This recipe is the Salty Caramel Financier that many people have been asking for! Fortunately, many people who have tried this recipe said they have never had such delicious ones. Contrary to the light texture of my previous financier recipe, this one contains more powder than my basic formulation and a lot of caramel sauce. So it has a much richer and more intense flavor. I also put caramel sauce on the top and sprinkled Fleur de sel salt. It looks so pretty and tastes really good too. It’s so delicious, I hope you all try this recipe!

Ingredients:
  • 3 oz. Burnt butter (browned butter)
  • 3.2 oz. Egg white
  • 2.3 oz. Granulated sugar
  • 0.38 oz. Corn syrup
  • 2.1 oz. All-purpose flour
  • 2.1 oz. Almond flour
  • 1/4 tsp. Baking powder
  • 1/4 tsp. Salt
  • 2.7 oz. Caramel sauce
Directions:

Put the butter in a pot and heat it to make browned butter and leave it for a while until use.

Put the egg white in a bowl, add sugar, salt, and corn syrup, and mix lightly with a whisk so that there are no bubbles and the sugar dissolves.

Sift almond flour, all-purpose flour, and baking powder and mix with a whisk until the powder is visible.

Add the browned butter chilled to 104-140 °F/40-60 ℃ and mix until completely mixed.

Add caramel sauce and mix. Rest the batter in the refrigerator for about 1 hour.

Fill the mold with 90% of the batter and bake in a preheated oven at 374℉/ 190℃ for 13 minutes. (Unox Convection Oven).
