The vibrant blood orange, the subtle aniseed fennel, and extra citrus bang are a full-on burst in this braised dish. But no sweat for a harmonious match with the robust salmon steak. The fresh salmon pieces are a true match and take on all the aromatics throughout the braising process. A wonderful fresh-looking dish with melt-in-your-mouth salmon.

  • Vegetables
  • 1 ea. Medium fennel bulb, sliced
  • 1 ea. Navel orange, thinly sliced, seeds removed
  • 1 ea. Blood orange, thinly sliced, seeds removed
  • 1 ea. lemon, thinly sliced, seeds removed
  • 1 ea. Key lime, thinly sliced, seeds removed
  • 4 sprig Fresh dill
  • 1 ea. Dried de arbol chiles
  • 2 ea. Garlic
  • 3/4 cup Olive oil
  • 1/4 tsp. Kosher salt
  • 1/4 tsp. Ground black pepper
  • For The Salmonㅤ
  • 2 lb. Skinless salmon fillet, preferably center-cut
  • 1/4 tsp. Ground black pepper
  • 1/8 tsp. Flaky sea salt
  • 1/4 cup Olive oil

Toss the【Vegetables】in a large mixing bowl.

Season salmon with salt and place and top of the【Vegetables】mixture. Pour oil over.

Roast until salmon is just cooked through, about 30–40 minutes.
