Khanum is a steamed dish of dough rolls stuffed with minced meat and potatoes. Grounded on baked vegetables it is a traditional taste of Middle Asia. Ingredients:
  • [ For the dough: ]
  • 2.2 Lb. All-purpose flour
  • 2 Large Eggs
  • 2 Pinches Salt
  • 1 Cup Water
  • [ For the filling: ]
  • 1.1 Lb. Diced beef meat
  • 2 Large Onions
  • 3 Large Diced potatoes
  • 2 Pinches Salt
  • 2 Pinches Black pepper
  • 2 Pinches Cumin
  • 10 Large Bell peppers
  • 5 Large Tomatoes
  • 3 Large Hot peppers
  • Salt, black pepper for seasoning
  • Bunch of Chopped parsley

Prepare the dough: In a bowl mix flour with salt, eggs, and a cup of water. Knead the dough until it is ready. Cover the finished dough with a napkin.

Prepare the filling: Mix together the diced beef, salt, black pepper, cumin, chopped onions, and diced potatoes.

Divide the dough into 10 parts and create small balls. Roll them out as thin as possible. If possible, give the rolled dough a round shape and brush with vegetable oil.

From the center of the formation, put the stuffing and try to leave 3-4 centimeters of space between the edge of the stuffing and the formation.

Put the rolling pin on the formation with stuffing and create a roll, then squeeze the roll on the rolling pin and take it out. This way you will have 10 squeezed small rolls. Set them aside.

Take the paprikas and tomatoes, clean and cut them into smaller slices. Put them in a saucepan along with hot peppers. Season with salt and pepper.

Place the rolls on the top of the vegetables in the saucepan and cook for 30 minutes.
